Favorite recipes while living in JapanChicken Cacciatore (12/11/07)
This is from our friend Chris Mason, and is one of their favorites
Chicken Cacciatore:
1 medium onion, thinly sliced
3-lb. chicken, cut up
2 cans (6-oz. each) tomato paste
1 can (4-oz.) sliced mushrooms, drained
1 teaspoon salt
1/2 teaspoon pepper
2 cloves garlic, minced
2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon celery seed
1 bay leaf
1/2 cup dry white wine
Place sliced onion in bottom of stoneware. Add chicken pieces. In a bowl, stir together tomato paste, mushrooms, salt, pepper, garlic, herbs and white wine. Pour over chicken. Cook on low 8 hours or high 4 hours. Serve over spaghetti.
