Pulled Pork Sandwiches

Pulled Pork Sandwiches (T. Wise, Boston, MA)
1 large onion, sliced
1 pork roast (boneless if you can get it) – 2~3 pounds
1~2 teaspoons dried herbs –
I use “herbes de province” – but some thyme, rosemary, fennel would work
Salt & Pepper
2 cups beef broth

Place the sliced onion in the bottom of the crockpot, generously sprinkle the pork roast with salt, pepper, and dried herbs. Place the pork roast on top of the onion. Pour the beef broth into the crockpot. Place the lid on the crockpot; set to low for 4~6 hours. When the pork is cooked, remove it from the crockpot, shred it with 2 forks and mix it with barbecue sauce (store bought or home made). Use a little of the broth from the bottom of the pot to moisten the meat mixture, if you like. Serve on buns with cole slaw on the side. Very good pulled pork! (Sometimes I mix the onions into the pork as well.)
